Ingredients:
- 1 pound chicken thighs
- 2 tablespoons coconut oil
- 2 tablespoons coconut flour
- 2 cups spinach, chopped
- 1 teaspoon oregano
- 1 cup cream
- 1 cup chicken broth
- 2 tablespoons butter, melted
Directions:
- Melt the coconut oil in a skillet and brown the chicken on all sides. Set aside.
- Meanwhile, melt the butter and whisk in the flour over medium heat. Whisk in the cream and bring to a boil. Stir in oregano.
- Add the spinach to the skillet and cook until wilted.
- Pour the sauce over, and cook for a minute.
- Add the thighs in the skillet and cook for an additional minute.
