Chicken in Creamy Spinach Sauce




Servings: 4
Preparation and Cooking Time:30 minutes

Ingredients:
  • 1 pound chicken thighs
  • 2 tablespoons coconut oil
  • 2 tablespoons coconut flour
  • 2 cups spinach, chopped
  • 1 teaspoon oregano
  • 1 cup cream
  • 1 cup chicken broth
  • 2 tablespoons butter, melted

Directions:

  1. Melt the coconut oil in a skillet and brown the chicken on all sides. Set aside.
  2. Meanwhile, melt the butter and whisk in the flour over medium heat. Whisk in the cream and bring to a boil. Stir in oregano.
  3. Add the spinach to the skillet and cook until wilted.
  4. Pour the sauce over, and cook for a minute.
  5. Add the thighs in the skillet and cook for an additional minute.
