Ingredients:
- 8 bacon strips, chopped
- ⅓ cup Dijon mustard
- Salt and ground black pepper, to taste
- 1 cup onion, chopped
- 1 tablespoon olive oil
- 1½ cups chicken stock
- 3 chicken breasts, skinless and boneless
- ¼ teaspoon sweet paprika
Directions:
- In a bowl, mix paprika with mustard, salt, and pepper, and stir well. Spread this on chicken breasts and massage.
- Heat a pan over medium–high heat, add bacon, stir, cook until it browns and transfer to a plate.
- Heat the same pan with oil over medium–high heat, add chicken breasts, cook for 2 minutes on each side, transfer to a plate.
- Heat pan once again over medium–high heat, add stock, stir, and bring to a simmer.
- Add bacon and onions, salt, and pepper, and stir.
- Return chicken to pan, stir gently, and simmer over medium heat for 20 minutes, turning meat halfway through.Divide chicken on plates, drizzle the sauce over it, and serve.
